THE COMPOSITION PROTOCOL

Abundance is a question
of which bit.

Water and organic tissue supply the bulk-building-block category: hydrogen, carbon, nitrogen and oxygen. Mineral constituents include structural and electrolyte chemistry. Trace biology identifies small-quantity physiological roles. These are broad editorial tiers, not a measured ordering within or between every category.

A whole bird, a bone-in wing and 100 grams of cooked edible meat are different samples. Bone changes the mineral picture; cooking changes water content; salt and sauce change the prepared food. The sample selector explains these distinctions without pretending to recalculate an assay.

Elements generally occur in compounds or as ions. Chlorine in this context can mean chloride in salt, not chlorine gas. A trace element's nutritional role does not imply that more is better.

Why there are no invented percentages

No chicken-specific elemental mass-balance dataset has been imported. Every element therefore has an unknown numerical abundance. Human-body percentages are not used as chicken measurements. The gray tiles include evidence gaps and elements for which no ordinary food role has been assigned; gray is not a laboratory result of zero.

Exposure does not mean detection

Arsenic, mercury, lead and fluorine are flagged because poultry water can be an exposure route. These flags do not say they were detected in a chicken wing, and provide no concentration, prevalence or safety conclusion about any restaurant. Many other elements may require investigation; this is not an exhaustive contaminant screen.
